In-Person & Virtual Teaching Kitchen - Build Your Own Sushi
Share this page

This month we're offering TWO opportunities to learn how to cook along with us: our usual Virtual Teaching Kitchen class AND our in-person cook-along class! Build your culinary skills, learn about the ingredients you're using, and increase your confidence in the kitchen.

Registered dietitian, Eliza, will walk you through building your own sushi and making a sriracha mayo for drizzling or dipping. You can choose your filling options--sushi-grade salmon, cucumber, carrot, avocado, and more--and will be instructed on cutting the ingredients, preparing the sushi rice, and two methods of rolling the sushi using nori seaweed.

In our in-person class, the cooked sushi rice will be provided for you. All other ingredients will be provided along with the tools to prepare them to create your own delicious lunch.

Join us in-person on Thursday, May 16th from 12-1pm in the Joseph B. Martin Conference Center at 77 Avenue Louis Pasteur. Click here to sign up for the in-person class. The ingredients will be provided as a part of your registration. Limited space is available.

Our virtual class will be held on Tuesday, May 14th from 5:30-6:30pm over Zoom. Click here to sign up for this free, virtual class. No need to have a sushi-rolling mat at home; sushi can be made using plastic wrap and a dish towl or piece of parchment paper. If you are interested in purchasing the pre-prepped and measured ingredients for making the recipe at home during the virtual class, you may do so through CaterTrax and pick them up from our cafes on campus.

If you have any questions or are interested in booking a Teaching Kitchen class for your department or group, please e-mail Eliza at Eliza_Leone@HMS.Harvard.edu. We look forward to seeing you!

RADISH Symbol

Restaurant Associates is committed to improving the health and well-being of our customers through RADISH: Delicious, Innovative, Sustainable, and Healthy food.

Breakfast under 400 calories
Lunch under 600 calories
Snacks under 250 calories
Always conscious of fat, sodium, and sugar

Just look for the RADISH icon in the cafe and on our menus.

The RADISH icon is our way of making food choices easier for our guests that prefer better-for-you options.

This icon identifies items that fit within strict nutrition fact guidelines--focused on calories, saturated fat, trans fat, added sugar and sodium--that we've set for entrees, side dishes, snacks, beverages and other categories. To learn more about the nutrition fact guidelines, you can find the criteria here:

RADISH_Nutrition_Criteria_2022.pdf.

You will see this symbol at all of our stations throughout our cafes because we prioritize wellness in our menu writing and food purchasing. If any items don't have this symbol, that doesn't necessarily mean an item is "unhealthy," it just means we may not be following a recipe for that item and don't know the nutrition facts or the nutrition facts don't fit within our strict guidelines.

However, we know that everyone has a different idea of what "healthy" means. This symbol is just one way that we like to provide some help for those that want guidance, but of course, no one meal choice determines health and everything can fit into a healthy diet in moderation.

If you have questions or comments about our better-for-you options of the RADISH symbol, please contact Eliza Leone, MS RD LDN, our in-house registered dietitian: eliza_leone@hms.harvard.edu.
